Nourishing Breakfasts: Veggie Packed Zucchini And Haloumi Fritters Recipe

Start your day right with this nourishing and flavorful breakfast recipe, perfect for women with PCOS looking to support their weight loss journey. Packed with fresh zucchini, carrot, and protein-rich halloumi, these veggie fritters are a satisfying and low-carb option to keep blood sugar levels stable. Enhanced with the fiber-rich benefits of psyllium husks and almond meal, this dish is both filling and nutritious. Serve with a side of rocket leaves, a dollop of Greek or coconut yoghurt, and a squeeze of lemon for a refreshing, balanced meal that’s easy to prepare and ideal for PCOS management.

Ingredients

  • 1 medium zucchini
  • 1 medium carrot
  • 100g halloumi cheese, grated
  • 1.5 tablespoons almond meal
  • 1.5 tablespoons psyllium husks
  • 4 eggs
  • 1 teaspoon dried mixed herbs
  • ½ teaspoon chilli flakes, optional
  • Pinch salt & pepper
  • 1 tablespoon olive oil or butter
  • 1 cup rocket leaves
  • 2 tablespoons or greek or coconut yoghurt to serve
  • Wedge lemon to serve


Method

  1. Grate zucchini and carrot, then squeeze excess liquid out using a clean tea towel or muslin cloth.
  2. In a large bowl, whisk together eggs, add grated vegetables, cheese, flour, herbs, chilli, salt and pepper. Mix well.
  3. Allow mix to stand for 5 minutes until psyllium can expand and soak up liquid.
  4. In a large frypan, over medium heat butter or olive oil.
  5. Once hot scoop heaped spoonful of fritter into the pan, using the back of the spoon to create a rounded shape. After 2-3 minutes gently flip the fritters over and cook for another 2-3 minutes. Remove from heat.
  6. Serve on a bed of rocket leaves and top with yoghurt, alongside a wedge of lemon.


Tip!
If the mixture seems to runny before cooking add another tablespoon of psyllium as this will help to soak up extra liquid.
