Ingredients
- 1 medium zucchini
- 1 medium carrot
- 100g halloumi cheese, grated
- 1.5 tablespoons almond meal
- 1.5 tablespoons psyllium husks
- 4 eggs
- 1 teaspoon dried mixed herbs
- ½ teaspoon chilli flakes, optional
- Pinch salt & pepper
- 1 tablespoon olive oil or butter
- 1 cup rocket leaves
- 2 tablespoons or greek or coconut yoghurt to serve
- Wedge lemon to serve
Method
- Grate zucchini and carrot, then squeeze excess liquid out using a clean tea towel or muslin cloth.
- In a large bowl, whisk together eggs, add grated vegetables, cheese, flour, herbs, chilli, salt and pepper. Mix well.
- Allow mix to stand for 5 minutes until psyllium can expand and soak up liquid.
- In a large frypan, over medium heat butter or olive oil.
- Once hot scoop heaped spoonful of fritter into the pan, using the back of the spoon to create a rounded shape. After 2-3 minutes gently flip the fritters over and cook for another 2-3 minutes. Remove from heat.
- Serve on a bed of rocket leaves and top with yoghurt, alongside a wedge of lemon.
Tip!
If the mixture seems to runny before cooking add another tablespoon of psyllium as this will help to soak up extra liquid.
