Ingredients
Wrap Ingredients
- 1 large zucchini or 2 medium
- 80g cheese e.g. mozzarella
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon mixed herbs
- pinch sea salt
Filling Ingredients
- 2 cups rocket
- 1.5 tablespoons mayonnaise e.g. Undivided Food Co.
- 2 tomatoes thinly sliced
- 3 slices ham or preferred protein source
Method
- Pre-heat oven to 190C and prepare a baking tray with baking paper.
- Thinly slice zucchini using mandolin or knife, aiming for even round slices.
- Line zucchini slices up 4 x 5 on your baking tray ensuring a little overlap to allow wrap to hold together.
- Sprinkle with salt and mixed herbs. A drizzle of extra virgin olive oil and sprinkle cheese on top.
- Bake for 20 minutes or until golden brown and crispy. Remove from heat and allow to cool.
- Place wraps on chopping board with cheese side at the bottom. Top with rocket, tomato, mayo, ham or preferred toppings, season with salt and pepper and fold in half.
