Ingredients (makes 12 muffins)
- 2 large ripe bananas (approx 1 cup).
- 2 large eggs
- ¾ cup dairy free milk
- 3 tablespoons butter, melted
- 1 teaspoon vanilla
- 1 cup buckwheat flour
- ¼ cup CHIEF unflavoured collagen powder
- 2 tablespoons honey
- 1 teaspoon cinnamon
- ½ teaspoon baking powder
- Pinch sea salt
- ¼ cup dark chocolate chips
Method
- Preheat the oven to 180C.
- In a blender add banana, egg, dairy free milk, melted butter, honey and vanilla. Blend until smooth.
- Transfer the batter into a medium size mixing bowl. Add in all other ingredients. Mix well.
- Scoop batter into prepared muffin tray and bake for 15-18 minutes or until cooked through.
- Allow to cool before removing from tray.
